Blueberry Walnut Pancakes

  • 3/4 cup brown rice flour
  • 1/4 cup almond meal flour
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tbsp. hemp hearts
  • 1 tsp. ground cinnamon
  • 2 medium bananas
  • 2 tbsp. almond butter or peanut butter
  • 3/4 cup almond milk
  • 1 tbsp. olive oil
  • 1 tsp. vanilla
  • 1/2 cup blueberries
  • 1/4 cup chopped walnuts
  1. In a mixing bowl, whisk together the dry ingredients.
  2. In a food processor, whip together the almond butter and bananas.
  3. In a second bowl, whisk together all the wet ingredients.
  4. Combine the dry ingredients into the wet ingredients while heating a pan to medium temperature. Gently fold in blueberries and walnuts. Cook pancakes on both sides until golden.
  5. Serve with syrup or fresh sliced fruit. Makes 10–12 medium pancakes.
