Super-Healthy Banana Hemp Chia Maca Pancakes

While we don’t normally need a reason to eat a plate of pancakes, we’re more than happy to fix these banana flapjacks today in honor of National Banana Bread Day (February 23). The fact that they’re packed with a host of nutritious ingredients—including hemp for omega-3 and omega-6 fatty acids; chia for antioxidants and omega-3s; and maca, a Peruvian root rich in vitamins (B, C and E) that is purported to boost male fertility (the jury is still out on the claim)—doesn’t hurt either. Enjoy!
Banana Hemp Chia Maca Pancakes
Ingredients
- 3/4 cup brown rice flour
- 1/4 cup almond meal flour
- 3 tsp. baking powder
- 1/4 tsp. salt
- 1 tbsp. chia seeds
- 1 tbsp. hemp hearts
- 2 tbsp. maca powder
- 2 medium bananas
- 2 tbsp. almond butter or peanut butter
- 3/4 cup almond milk
- 1 tbsp. olive oil
- 1 tsp. vanilla
Directions
- Whisk together the dry ingredients in a mixing bowl. In a food processor, whip together the almond butter and bananas.
- In a second mixing bowl, whisk together the wet ingredients. Heat a pan to medium heat. Add the wet ingredients to the dry and combine.
- Cook pancakes till golden brown. Serve with syrup or fresh sliced fruit. Makes 10–12 medium pancakes.
