Raw Coconut Macaroons

These raw coconut macaroons are a go to treat for me - I love them! They are vegan, dairy-free, grain-free and processed sugar-free. Coconut, coconut oil and coconut sugar are all used, but you can sub the coconut sugar with your favorite sweetener. This recipe makes 12 macaroons. I use the dehydrator to get a really crispy outside, but you don’t have to! You can just set them in the refrigerator.

Raw Coconut Macaroons

Ingredients:
  • 1 cup coconut, shredded
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/3 cup almond butter
  • 1 teaspoon maca powder
  • 1/4 teaspoon sea salt
Directions:
  1. In a bowl, mix the coconut, coconut sugar, coconut oil, almond butter, maca and sea salt.
  2. Use your hands to mix it up really well! It should look like cookie dough. If it’s not thick enough, add a little more almond butter.
  3. Once the dough is the right consistency, roll into balls. Sit on dehydrator sheets (optional) and dehydrate at 105 for at least 5 hours.
  4. Enjoy!
